Good morning. Today is sextidi, the 26th of Prairial, Year CCXXXI. We celebrate le jasmin, a flowering shrub that smells like perfume.

Jasmine rice is not white rice that's been soaked in jasmine essential oils. It's simply a variety that has been crossbred for scent and size. Grown mainly in Cambodia and Thailand, the rice's larger amount of 2-acetyl-1-pyrroline, a chemical that produces that "hot popcorn" or "baking bread" smell when heated. Because this compound off-gasses, jasmine rice is most flavorful when freshly harvested.

Jasmine is a lovely shrub worthy of a deep dive, but I'm feeling under the weather and need to take an exceedingly rare day off. Please enjoy these photos instead. I'll be back at it tomorrow, I promise!
